Biodynamic farm has praised by many winemakers, but Waterford is introducing that to the world of whiskey with biodynamic barley grown by Irish growers (Trevor Harris, Alan Mooney, and John McDonnell). Fascinating stuff, and rather fantastically full-flavoured, too.
